Banana Nut Bread

If there isn’t enough time to make Banana Oatmeal Cookies, this is a good substitute.  This banana nut bread tastes great when served warm or cold.  Baking time is reduced if the batter is poured into mini loaf tins!

Prep Time – 15 minutes                                Makes – 1 loaf or 8 mini loaves

Ingredients -

3 ripe bananas, mashed                                         1 teaspoon salt

2 eggs, beaten                                                        1 teaspoon baking soda

2 cups flour                                                              3/4 cup chopped pecans

3/4 cup sugar

Preheat oven to 350 degrees.

Mix the mashed ripe bananas and beaten eggs in a large bowl.  Stir in the flour, sugar, salt, and baking soda.  Add the chopped pecans and mix.

Pour the batter in a greased or buttered loaf pan and bake for 50 minutes to 1 hour – OR - pour the batter into greased or buttered mini loaf tins and bake for 25 – 30 minutes.

**The banana bread is done when it’s a golden brown and/or when a toothpick or butter knife inserted into the middle of a loaf comes out clean.**
